Best potato salad ever
Serves 8 to 10 or more as a side dish.
2 pounds medium-sized red potatoes
1 recipe new wave sauce gribiche
1 tablespoon freshly squeezed lemon juice
2 teaspoons champagne vinegar
2 tablespoons olive oil
1/4 teaspoon salt or to taste
Freshly ground black pepper
Place scrubbed potatoes in a large pot of salted water and bring to a boil over high heat. Reduce heat to medium-high and boil for 20-25 minutes, or until potatoes are just cooked through.
Drain the potatoes in a colander and run water over them to cool them. Let them dry, and when they're cool enough to handle, cut them into thick slices and place them in a large bowl with the new-wave sauce gribiche, the lemon juice, the vinegar, the olive oil, salt and pepper. Toss well, adjust seasoning and serve.
