Classic Margarita on the Rocks

We love our Margaritas on the bright side; if you like them sweeter, use a little less lime juice and a little more orange liqueur.

Makes one Margarita; batch instructions follow the recipe.

Ingredients

Salt for rimming the glass

2 ounces tequila (blanco or silver are fine)

3/4 ounce Combier, Grand Marnier or other orange liqueur

3/4 ounce freshly squeezed lime juice (about one medium-sized, medium-juicy lime)

Instructions

1. Spread salt on a small plate, rub the rim of a rocks glass with the cut side of a lime, then dip the rim into the salt. Fill the glass with ice and set aside.

2. Fill a cocktail shaker or jar with ice. Add the tequila, Combier or Grand Marnier and lime juice and shake a long time — until the shaker is so cold you can barely hold it. Strain into the prepared glass and enjoy. If you like it a little sweeter, at more Triple Sec. If you like it tarter, add more lime.

For a batch of four margaritas: Fill a large jar with ice. Add 1 cup tequila, 3 ounces Combier or Grand Marnier and 3 ounces lime juice and shake until the jar feels nearly frozen. Strain into four ice-filled, salt-rimmed rocks glasses and enjoy.
